There are numerous devoted aficionados who exclusively partake in Kusudama sake, proclaiming, “I only drink Kusudama sake.” In Japanese, “kusudama” denotes a decorative paper ball used during festive occasions, often containing confetti that cascades out like a piñata, or an ornamental scent bag filled with aromatic herbs and fragrances. Due to its auspicious name, it is the ideal sake for celebratory events as well as festivals.
At Kawashiri, their distinctive approach involves aging their product for extended periods to prolong the fermentation process. It is the sole sake brewery in Hida specializing in the art of aging sake.
